Strawberry Crunch Cupcake Recipe

Ingredients:

– 1 box strawberry cake mix (plus ingredients listed on the box, such as eggs, oil, and water) – 1 teaspoon strawberry extract – Buttercream frosting (homemade or store-bought)

Ingredients:

– 1/2 cup strawberry jam or preserve – 1 cup crushed cereal (such as cornflakes or Cap'n Crunch) – 1/4 cup melted butter 1/4 cup granulated sugar 

Preheat your oven to the temperature specified on the cake mix box and line a cupcake pan with paper liners. 

Prepare the strawberry cake batter according to the instructions on the box, adding the strawberry extract for extra flavor. 

Fill each cupcake liner two-thirds full with the cake batter and bake according to the package instructions. Allow the cupcakes to cool completely before frosting. 

In a small bowl, mix together the crushed cereal, melted butter, and granulated sugar until well combined. 

Frost each cupcake with a generous amount of buttercream frosting, either using a piping bag or spreading it with a knife. 

Spoon a small amount of strawberry jam or preserves onto the center of each cupcake. 

Sprinkle the crunch topping over the frosting and jam, pressing gently to adhere.  Serve and enjoy!
