Raspberry Donuts

Ingredients: – 2 cups all-purpose flour – 1/2 cup granulated sugar – 2 teaspoons baking powder – 1/2 teaspoon salt – 3/4 cup milk

– 1 egg, beaten – 2 tablespoons unsalted butter, melted – 1 teaspoon vanilla extract – Raspberry jam or preserve – Powdered sugar, for dusting

Preheat your oven to 350°F (175°C) and grease a donut pan.  In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, combine the milk, beaten egg, melted butter, and vanilla extract.  Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.  Place a small spoonful of raspberry jam or preserves in the center of each donut.

Bake for 10-12 minutes, or until the donuts are lightly golden and spring back when touched.  Allow the donuts to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Once the donuts are cool, dust them with powdered sugar before serving.
