Zucchini Apple Pie 

Ingredients: – 4 cups peeled, cored, and sliced apple – 2 cups grated zucchini – 1/2 cup granulated sugar – 1/4 cup brown sugar – 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg – 1 tablespoon lemon juice – 2 tablespoons all-purpose flour – 1 prepared pie crust (store-bought or homemade) – 1 egg, beaten (for egg wash) – Optional: vanilla ice cream or whipped cream for serving

Instructions: 1. Preheat your oven to 375°F (190°C). 2. In a large mixing bowl, combine the sliced apples, grated zucchini, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and all-purpose flour.

1. Roll out the pie crust and place it into a 9-inch pie dish. Trim any excess crust hanging over the edges. 2. Pour the apple-zucchini mixture into the pie crust, spreading it out evenly.

1. If desired, create a lattice or decorative crust with any leftover pie dough. 2. Brush the top of the pie crust with the beaten egg to create a shiny finish.

Place the pie in the preheated oven and bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.

1. Once baked, remove the pie from the oven and let it cool slightly before serving. 2. Serve slices of zucchini apple pie warm, optionally topped with a scoop of vanilla ice cream or a dollop of whipped cream.
