Jammy Raspberry Cream Pretzel Hand Pie

Ingredients: – 1 1/4 cups all-purpose flour – 1/4 teaspoon salt – 1/2 cup unsalted butter, cold and cut into cube – 1/4 cup cold water – 1/4 cup raspberry jam

– 4 ounces cream cheese, softened – 2 tablespoons powdered sugar – 1 egg, beaten (for egg wash) – Coarse sugar, for sprinkling

Instructions: 1. In a large mixing bowl, combine the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

1. Gradually add the cold water, stirring until the dough comes together. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes. 2. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a small bowl, mix together the raspberry jam, softened cream cheese, and powdered sugar until smooth. Set aside.

On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness. Using a round cutter or a glass, cut out circles of dough.

Place a small dollop of the raspberry cream cheese filling in the center of each dough circle. Fold the dough over the filling to create a half-circle shape. Press the edges together to seal, then crimp with a fork.

Transfer the hand pies to the prepared baking sheet. Brush the tops with beaten egg and sprinkle with coarse sugar.
