Homemade Cheesy Potato Soup

Ingredients 2 tablespoons butter 1 medium onion, chopped 6 medium potatoes, peeled and cubed

5 cups water 2 cups 2% milk 1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted 1/2 teaspoon garlic salt

1/8 teaspoon pepper 12 ounces Velveeta, cubed Minced fresh parsley

Directions In a Dutch oven, melt butter over medium-high heat. Add onion; simmer and stir for 5 minutes, or until tender.

Bring the water and potatoes to a boil. Lower the heat, cover, and simmer for 15 minutes, or until the potatoes are soft.

Warm the mixture well by stirring in the milk, soup, garlic powder, salt, and pepper. Add the cheese and stir until it melts. Add a little parsley on top.
