Cherry Almond Mousse Pie

Ingredients 1 can (14 ounces) sweetened condensed milk, divided 1 ounce unsweetened chocolate 1/2 teaspoon almond extract, divided

1 frozen pie shell (9 inches), baked 1 jar (10 ounces) maraschino cherries, drained 1 package (8 ounces) cream cheese, softened 1 cup cold water

1 package (3.4 ounces) instant vanilla pudding mix 1 cup heavy whipping cream, whipped 1/2 cup chopped toasted almonds Chopped chocolate, optional

Directions Stir 1/2 cup milk and chocolate in a small saucepan over low heat until chocolate melts and mixture thickens, about 4 minutes. Mix with 1/4 tsp extract. Pour into pie shell.

Reserve eight entire cherries for garnish. Chop and reserve the remaining cherries. Mix cream cheese in a large bowl until frothy.

Beat in remaining milk and water slowly. Beat pudding mix and remaining extract. Add whipped cream. Add chopped cherries and almonds.

Pour on pie. Chill 4 hours to set. Whole cherries and chopped chocolate can be added.
