Butter Flaky Pie Crust

Ingredients 1 ¼ cups all-purpose flour ¼ teaspoon salt ½ cup butter, diced and then chilled ¼ cup ice cold water, or as needed

Directions Mix flour and salt in a large bowl. Cutting cooled, chopped butter with a pasty blender yields gritty crumbs.

Add 1 tablespoon of cold water at a time and stir with a spatula or your hands until the dough comes together; you may need less than 1/4 cup. Wrap dough in plastic and chill for 4 hours or overnight.

Roll cooled dough into an 11-inch circle on a thoroughly floured surface, adding flour to your rolling pin as needed.  

Unroll dough over a 9-inch pie dish after carefully rolling it onto the pin. Press dough evenly into dish bottom and sides. Trim extra dough and flute edges.

As per your pie recipe, blind-bake or fill and bake.
